300–400 g pork shoulder roast, cut into cubes
1 head of broccoli, cut into florets
1 butternut squash (or other variety), peeled and diced
2 tbsp olive oil
1 garlic clove, chopped
Salt, pepper, thyme or herbs of your choice
Lemon (optional, for zest or juice)
Preparation
Preheat oven to 200 °C (400 °F).
On a baking sheet lined with parchment paper, spread the pork cubes, broccoli florets, and squash pieces.
Drizzle with olive oil, add garlic, salt, pepper, and herbs. Mix well to coat everything.
Roast for about 20–25 minutes, stirring halfway through, until the pork is cooked through and the vegetables are tender.
When serving, you can add a touch of lemon zest or juice if you like.
