5 lbs of Italian tomatoes from Quebec
2 yellow onions, finely chopped
4 cloves garlic, minced
2 tbsp olive oil
1 tbsp salt
1 tsp ground black pepper
1 tsp sugar (optional, to reduce acidity)
1 small bunch of fresh basil (or 1 tbsp dried basil)
1 tsp dried oregano
Preparation
Prepare the tomatoes : wash, cut into quarters, and remove any hard parts. No need to peel if you're blending the sauce afterwards.
In a large saucepan, heat the olive oil over medium heat. Sauté the onion for 5 minutes, then add the garlic.
Add the tomatoes and simmer gently over medium-low heat for 45 to 60 minutes, stirring occasionally.
Add salt, pepper, sugar (if using), basil and oregano.
For a smooth sauce, use a hand blender and puree. For a rustic texture, leave as is.
Adjust the seasoning.
Let cool, then store in sterilized mason jars or in the freezer.
