Ingredients (6–8 servings or more depending on the size of the turkey)

  • 1 young Flamingo turkey (3 to 5 kg)

  • 3 carrots, cut into chunks

  • 2 onions, quartered

  • 3 celery stalks

  • 4 cloves of garlic

  • 80g softened butter (or ¼ cup olive oil)

  • 1 tbsp dried (or fresh) thyme

  • 1 tbsp dried (or fresh) rosemary

  • Salt and pepper, to taste

Preparation

  1. Preheat oven to 165°C (325°F).

  2. Place the turkey in a large roasting pan.

  3. Rub the skin with butter (or oil) mixed with herbs, salt and pepper.

  4. Stuff the inside of the turkey with carrots, onions, celery and garlic.

  5. Cover with aluminum foil and bake.

  6. Allow approximately 15 minutes of cooking time per pound (33 min/kg), until the internal temperature of the thigh reaches 82°C (180°F).

  7. Remove the foil for the last 30 minutes so that the skin browns well.

  8. Let stand for 20 minutes before cutting.
