🥩 Recipe - Oven-baked pork roast with Quebec carrots and apples

Ingredients (6–8 servings)
1 picnic pork shoulder (~2.5 to 3 kg)
3 Quebec carrots, cut into sticks
2 apples (Paula Red or Sunrise), sliced
2 yellow onions, quartered
3 cloves garlic, chopped
2 tbsp Dijon mustard
250 ml chicken broth or apple cider
2 tbsp olive oil
1 tsp dried (or fresh) thyme
Salt and pepper, to taste
Preparation
Preheat oven to 150°C (300°F).
Place the roast in a large casserole dish or roasting pan.
Mix together the olive oil, Dijon mustard, garlic, salt, pepper, and thyme. Brush the entire surface of the roast with this mixture.
Add the carrots, apples and onions around the meat.
Pour the broth (or cider) into the bottom of the casserole dish.
Cover and cook gently in the oven for 3 to 4 hours, until the meat is tender and flakes easily with a fork.
Remove the lid 20 minutes before the end to allow the surface to brown.
Serve hot with roasted vegetables and a little of the cooking juices.
